In the past 30 years some of the local chat and mithaiwalas in the bigger metros have evolved into multi-location franchises and even to becoming ethnic snackfood conglomerates with outlets at international airports. Some like Haldiram, Bikanerwala and Saravana Bhavan have outlets across the globe. The switch is not just from roadside to table but also to retail outlets and supermarkets that serve the diaspora in several countries. To a large extent this portability and export of Indian snacks has been aided by developments in the manufacturing process and in packaging.
